Vegetable Beef Soup
There’s nothing like an old favorite to warm the heart and stay on track with your meal plan and goals!
Vegetable Beef Soup
1 lb. lean ground beef
2 cans crushed tomatoes
1 bell pepper, chopped
1 onion, chopped
1 tsp olive oil
1/2 tsp salt
1/2 tsp ground pepper
1 tsp garlic powder
1 tsp Tony’s seasoning
1 tsp dried oregano
1 tsp dried thyme
1 bay leaf
Ham bone
1 can corn
1/3 head of cabbage, chopped
3 whole carrots, chopped
2 large sweet potatoes, chopped
1/2 bag of frozen edamame
1 cup low sodium beef stock
2 cups water
Directions
- Brown meat with bell pepper, onion, olive oil and seasonings.
- IN a large pot, combine ground meat mixture, and all ingredients in a large pot. Bring to a boil, then reduce to a simmer and cook until vegetables are tender.
- Remove bay leaf and serve with warm, crusty bread!
