Ultimate Reset Week 1 Review

So, I am finished with Week 1 of my Ultimate Reset!  If you missed the first blog post about the reset, it is HERE.   You can read there about why I decided to give the reset a go.

Breakfast Day 1

RESULTS FROM WEEK 1

Some of my biggest takeaways from this first week:

  • I missed caffeine!!!! No big surprise there. 
  • I love meatless meals!  That WAS a shocker.  
  • I lost 5 lbs….mostly bloat.
  • My stomach feels amazing!
  • My joint pain has lessened a TON!!!!
So, I am super excited, needless to say to continue.
Breakfast, Day 2
THE STRUGGLES
Has it been easy?? Not entirely.  But it hasn’t been as hard as I expected. Some of the tougher aspects of this have been:
  • Meal prep took some extra time.  
  • The first few days were kind of tough, because I was tired, sluggish and slightly depressed.  That always happens when I cut junk out of my body though.
  • The boys had Papa John’s pizza Friday night, and it looked REALLY good….but I didn’t ;).
  • If I found myself running late or not where I could consume my meals at the right time, I felt a little irritable.  
  • The supplements throughout the day are sometimes difficult to remember.
But you know? Even the hard things have been good.  It has reminded me what it feels like to be a beginner on this journey.  To truly rely on God’s strength and not my own to make positive changes.  I love 2 Timothy 1:7 so much!

It is a life verse. And it has been a tough week for me even outside the reset – in my job, our schedules, etc.  Just life!  But I’m doing this life with Jesus’s POWER and He gives me Love and Self-Control to face each day! 

I also began a 21 Day Devotion Plan in the Bible App to accompany my reset.  It’s called Lead Like Jesus. It has been incredible!  The focus this week has been about New Beginnings, taking things Day  by Day, and really overcoming Fear to accomplish the Plan God has for us! I would definitely recommend this plan. 
ZUCCHINI CASHEW SOUP

One of my FAVORITE recipes from the Reset has to be an unexpected one!  It is the Zucchini Cashew Soup.  Oh my goodness.  It’s the simplest Recipe Ever, and it was so tasty and filling!  
Zucchini Cashew Soup

Ingredients
1 large or 2 small zucchini, cut into chunks and steamed
¼ cup raw cashews
Himalayan salt or Bragg® Liquid Aminos (to taste)
Herbal seasoning or fresh herbs, like basil or dill (optional; to taste)
Steamed vegetables (optional; for chunky soup)
Directions
Soak cashews in enough water to cover for 1 hour; drain. Combine cashews, zucchini, salt or aminos, and seasonings in blender and mix until smooth, adding water as needed for desired consistency. Pour into saucepan and reheat gently, but do not boil. For chunky soup, add steamed chopped vegetables of your choice. Can also be served cold. Serves 1.

Week 2
So, now I move into Week 2!! The Release phase.  It focuses on cutting out all animal products and mostly eating a diet of vegetables, fruits and whole grains.  I will be honest and say I”m a little nervous on this front. I am an animal products lover….But here goes nothing!  
I am planning to be very cautious about weight loss. I did not set out to do this for weight loss, and I don’t want to lose much more.  If needed, I will add in some extra protein and healthy fats.
