Stuffed Cabbage Soup
I love cabbage so much! And something about cooler weather makes me crave it more. And I am always looking for an easy meal especially now that School, Church and Baseball are in full swing!
So this Stuffed Cabbage Soup recipe is perfect!
Ingredients
Olive Oil
1 Large yellow onion, chopped
3 garlic cloves, minced
1 teaspoon sea salt
2 tsp cumin
1 tsp crushed red pepper
1 tsp ground black pepper
2 lbs. lean ground turkey (you could substitute lean ground beef, deer meat, or chicken)
30 ounces diced tomatoes, canned
1 can tomato paste
1/3 cup Worcestershire sauce
6 cups low-sodium chicken broth
1 head cabbage, chopped
2 cups brown rice
Stuffed Cabbage Soup, Directions:
- In a large stock pot saute onion, garlic, salt and seasonings in a small amount of olive oil until mixture is aromatic and onions are translucent.
- Add ground turkey and bring to a simmer. Add diced tomatoes, tomato paste, Worcestershire sauce, and 4 cups chicken stock. Bring back to a simmer.
- Stir in cabbage and cook on medium/low covered about 20 minutes until cabbage is wilted and softened.
- Stir in rice and cover until rice is ready. Stir in remaining chicken stock, as needed until desired consistency is reached.
