Mason Jar Salad (gut health friendly)
Ingredients
6 ounces shredded chicken
2 cups chopped romain lettuce
1/2 cup roasted butternut squash
1/2 cup chopped tomatoes
1/2 cup chopped cucumbers
1 ounce roasted pumpkin seeds
1 serving lemon vinagarette
Directions
- Add vinagarette and chicken to the bottom of the jar.
- Layer the rest of the ingredients, ending with the romaine lettuce and twist top of jar on tight.
- Store in the refrigerator 3-4 days.
