Low Carb Flaxseed Waffles

These waffles are a great source of healthy fats and for those days you need a low carb treat!

I added a little almond butter and some Swerve confectioners sugar to mine, and they were DIVINE!

Ingredients

  • 2 cups ground flaxseeds
  • 2 tablespoons Swerve or Lakanto Sweetener
  • 3 teaspoons baking powder
  • Pinch sea salt 
  • 1½ cups unsweetened almond milk
  • ¼ cup melted coconut oil
  • 2 eggs
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla extract

Directions

  1. Whisk everything together in a bowl. Heat a waffle iron. Add batter by the 1/3-cup or so full and close the waffle iron. Cook until no steam remains, about 5 minutes.
  2. *Add small amounts of extra milk, if needed, if the batter thickens while sitting. Repeat cooking process for remaining batter. Top with sugar-free syrup or berries.
