Lemon Garlic Caesar Dressing
Of all the wonderful food we ate on our trip to St. Augustine, the one thing that stuck out to me the most was Caesar Dressing… of all things!!!
I ate a couple of really delicious salads with a variety of Caesar dressings. Lemon and garlic stuck out to me as being two ingredients I could NOT leave out of my own when I make it. So, I search and found a recipe similar to what I had on the trip. I tweaked it to suit my tastes, and I am going to be making this a LOT during the upcoming summer months!!
Lemon Garlic Caesar Dressing
Ingredients
A cup extra virgin olive oil
2 lemons juiced and zested
A few generous splashes of olive oil
A few dashes Worcestershire sauce
A heaping spoonful Dijon mustard
1/2 cup or so grated Parmesan cheese
few cloves chopped garlic
A sprinkle or two Salt and Pepper
Directions:
Mix everything together until smooth dressing forms. A blender, food processor or an old-fashioned whisk and bowl all work well!

How simple is that? My favorite salad had two heads of Romaine Lettuce, with roasted tomatoes, a little bit of crumbled bacon, and chunks of Blue Cheese. I would probably substitute that for Feta, because I keep it in the house.
I love making my own dressings. It’s super simple and I know exactly what goes in them. No preservatives or surprise ingredients.
