Easy Cauliflower Mash

Here’s a super simple veggie side recipe you can make in minutes to go with dinner! Don’t grab the processed carbs! Make this instead!

Ingredients

5 cups chopped cauliflower
3 tbsp heavy cream or half & half
2 tbsp butter
1 tsp salt
1/2 tsp black pepper
1 tsp garlic powder
1/2 cup shredded cheese of your choice

Directions:

  1. Place all ingredients (except cheese) in a large microwave safe bowl. Heat for 8 minutes, uncovered.
  2. Take out and stir. Replace in microwave and heat another 6 minutes until cauliflower is tender.
  3. Pour ingredients into a blender or food processor. Add cheese and pulse until smooth like potatoes.*

*mine were not completely smooth, but I like them that way. If you want them smoother, you could take a potato masher to them!

You could easily make this recipe what you want it to be! Add some brocolli for more green. Add some cream cheese for different consistency.

For my Portion Fix gals, One serving (1 cup) is 1 green container, 1/2 tsp, 1/2 blue.
