Cranberry Bran Muffins
I have been making these muffins since Matt and I got married, so I cannot remember where I originally found the recipe. BUt I am pretty sure it is tweaked from one my grandfather used to make! We love them! They are healthy, very tasty and filling! I have made them so much that the page in my recipe book is stained and crumpled…sign of a GREAT recipe, right???
Ingredients:
1 cup of almond flour
1/2 cup coconut flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
2 cups Bran cereal ( I use All Bran Buds)
1 1/2 cup of unsweetened coconut milk
1/3 cup packed brown sugar
1 egg
1/2 cup applesauce
1/2 cup dried cranberries (or frozen blueberries or whatever you want to add)
Directions:
1. Preheat oven to 400 degrees
2. Mix flour, powder, soda and cinnamon in a large bowl.
3. Mix cereal, milk, and sugar and let stand for 5 minutes. Then add egg and applesauce.
4. Add this to flour mixture; stir just until moistened. Mixture should be very “wet”…not runny but wet. Add cranberries.
5. Spoon batter into muffin pan sprayed with non-stick cooking spray or liners. 2/3 full.
6. Bake 18-20 minutes or until golden brown.
Makes 12 muffins
Occassionally, I use safflower oil instead of applesauce. This adds fat, but the safflower oil is very light. Us 1/3 cup, same as applesauce.
I add anything and everything to these muffins. Frozen or fresh blueberries are my favorite! Sometimes I add dark chocolate chips, raisins, walnuts. Whatever I have on hand!
