Clean Fruit Pizza Recipe
I love to try new recipes to share with my challengers and people who follow me.
I know that I had so many misconceptions about the term “clean eating” when I started.
That it would be boring. That I would be eating the same things over and over. That the recipes would be complicated and hard!n That there would be zero flavor! Boy! Was I wrong.
And this dessert is a perfect example! It was so simple and so easy!
I had all the ingredients on hand already, so I didn’t have to make a special trip to the store. That’s a winner in my book!

I found this for my Summer Strong challenge group, and it turned out be so delicious!
It actually ended up being dessert for my moms’ birthday on Monday and it was light and pleasant
Ingredients
Sugar Cookie Crust
- ¾ c coconut flour (I buy Red Mill brand from Kroger)
- 1½ t baking powder
- ¼ t sea salt
- ½ c coconut oil (organic, unrefined)
- 2 large eggs
- 3 T pure maple syrup
- 2 t vanilla extract
Pizza Sauce
- ½-1 c coconut milk yogurt (see notes)
- 4 Tbsp 1/3 fat cream cheese
Toppings
- 2 c mixed fruit of your choice. I used strawberries, raspberries, blueberries and kiwi. *Optional toppings: fresh mint, chopped nuts, toasted coconut.
Instructions
- Preheat oven to 350 degrees F.
- In a large bowl, sift together the coconut flour, baking powder and sea salt.
- In a separate bowl, combine melted coconut oil, eggs, vanilla and maple syrup.
- Mix with a whisk until well combined.
- Add the wet ingredients into the dry ingredients and stir until well incorporated.
- At this point, the dough should come together into a ball.
- Wrap it in plastic wrap and pop it in the freezer for 10-15 minutes (but not longer).
- Remove the dough from the freezer, take off the plastic wrap and transfer it to a sheet tray lined with a silpat or parchment paper.
- Press the dough out into any shape you like, until it’s about ¼ inch thick. Mine was soft but it was very manageable. It may crack a bit as you roll it out. That’s okay! Just work it back together with your fingers.
- When you have achieved the desired shape, pop it into the oven and bake for 12-14 minutes, or until it starts to brown around the edges. It will still feel a bit soft in the center.
- Remove from the oven and let cool.
- Once cooled, spread the yogurt/cream cheese mixture out all over the top, leaving a ¼ inch border around the edges. Spread on as much or as little as you like!
- Top with fruit of choice, and really pile it on there!
- Add your desired extra toppings of choice.
- Serve immediately.
