Low Carb Flaxseed Waffles
These waffles are a great source of healthy fats and for those days you need a low carb treat!
I added a little almond butter and some Swerve confectioners sugar to mine, and they were DIVINE!
Ingredients
- 2 cups ground flaxseeds
- 2 tablespoons Swerve or Lakanto Sweetener
- 3 teaspoons baking powder
- Pinch sea salt
- 1½ cups unsweetened almond milk
- ¼ cup melted coconut oil
- 2 eggs
- 2 teaspoons cinnamon
- 1 teaspoon vanilla extract
Directions
- Whisk everything together in a bowl. Heat a waffle iron. Add batter by the 1/3-cup or so full and close the waffle iron. Cook until no steam remains, about 5 minutes.
- *Add small amounts of extra milk, if needed, if the batter thickens while sitting. Repeat cooking process for remaining batter. Top with sugar-free syrup or berries.
