Rosemary and Olive Oil Baked Chicken Tenders
I am unashamedly a chicken tender freak!!! I love them! Baked, especially fried, grilled, however you want to serve it up, I. WILL. EAT. IT!!!!
So, when I saw this recipe on the back of the Triscuit box of Rosemary and Olive Oil crackers that I love so dearly, I was IN!
Of course, as usual, I modified it to fit my tastes, and I was really impressed! They were delicious! And an extremely healthy version of the fried ones I love so dearly…
Ingredients
1/4 cup white wheat flour
1/2 tsp salt
1/2 tsp pepper
1/4 tsp cayenne pepper
2 eggs
1 tbsp water
12 chicken tenderloins
24 Rosemary and Olive oil Triscuit crackers, finely chopped
2 Tbsp fresh parsley
Dipping Sauce of your choice…spicier the better!
Instructions
1.Preheat oven to 350 degrees.

2. Combine first four ingredients in one dish.
3. Whisk the eggs and water together and place them in a second dish for dipping.
4. Finely chop the crackers and parsley together. I used our Ninja blender.
5. Dip each piece of chicken in the flour first. Then the egg mixture, and finally coat them in the cracker mixture.
6. I lined a baking sheet with parchment paper and baked them for 20-25 minutes or until chicken is cooked all the way through.
These were delicious!!!! I served them for New Year’s Eve, and there were very few left over. I actually doubled the recipe too very easily.
Clean eating does not mean you have to sacrifice flavor AT ALL!!! Give these a try. I think you will love them. And your kids will too!
