Cashew and Oat Pancakes
These are from the 21 Day Fix Extreme meal planning guide. It has a lot of great recipes! I have been planning on making these for some time just didn’t get around to it. But this morning was perfect so I whipped them up. Literally took me about 5 minutes to mix the batter.
Ingredients
2 cup old-fashioned rolled oats
1/2 cup raw cashews
1 dash sea salt
1 tsp. ground cinnamon
1 large egg
1 Tbsp. coconut oil, melted
1 1/2 cups water
1 tsp. vanilla extract
5 cups mixed berries
1. Place oats, cashews, salt and cinnamon in food processor or blender; pulse until coarsely grounded.
2. Add egg, oil, water and vanilla extract; pulse until well blended. Batter will be thick, but you can add 2-3 additional tbsp. of water if needed.
3. Heat medium nonstick skillet, lightly coated with spray, over medium heat.
4. Spoon about 1/4 cup batter into skillet for each pancake; cook for 1 to 2 minutes or until bubbles form on top.
5. Flip with spatula and cook for 30 seconds.
6 Repeat with remaining batter.
7. Serve pancakes topped evenly with berries.
Makes 10 servings. 2 pancakes each.
I was the only one eating these, so I cut this recipe in half. I also added organic honey to mine for a little sweetness. The honey is not on the 21 Day Fix Extreme plan.
I will definitely make these again. They felt indulgent but weren’t. And the oats and cashews were very filling! I love finding something that satisfies me, AND knowing it’s good for me! Brain food!
