Family Turkey Meatloaf

I think for most of us meatloaf is a family staple.  It’s fast; it’s easy, and it makes great leftovers!  However, if made the traditional way, it can also hold tons of calories!! We are a ground turkey family and have been for a long time; even before the kids were born.  So, I learned a long time ago to make this yummy and lighter version for us!


I don’t think it’s every very pretty in loaf form, but it’s delicious!




Ingredients:
1 1/2-2 lbs ground turkey
3/4 whole wheat or panko bread crumbs (I like to buy the Italian kind)
1/4 cup milk
1 egg
1 small egg, chopped
3 cloves garlic, minced
1/2 tsp ground black pepper
1 1/2 tsp salt
1/2 tsp dried oregano
1/2 tsp dried basil

Topping:
1/2 cup ketchup
1/4 cup brown sugar
1 tablespoon Worcestershire sauce

Directions:
1. Preheat oven to 350 degrees F.  Spray a jelly roll pan with nonstick spray.
2. Mix ground turkey, bread crumbs, milk, onion, egg, salt, garlic, pepper, oregano, and basil together in a bowl; shape into a loaf and place in prepared jelly roll pan.
3. Mix ketchup, brown sugar, and Worcestershire sauce in a seperate bowl; set aside.
4. Bake meatloaf in preheated oven for 30 minutes; remove from oven and drain liquids.  Top meatloaf with ketchup topping. Return loaf to oven and continue baking until no longer pink in the center, about 30 minutes.  An instant-read thermometer inserted into the center should read at least 160 degrees F.


You can also make these into meatloaf muffins, which are great to make at the beginning of the week and grab “as needed.” 



I also use the same recipe when I make meatballs for spaghetti…minus the topping! When I make these, I saute them in some olive oil on the stove top.
