Banana Oat Chocolate Chip Muffins
I am always looking for something quick and healthy that Matt and the boys can snack on. These were appealing to me because they do not use flour. I have really grown to appreciate what can be done with some ground oats, people!!! These muffins turned out perfectly, and they are delicious!
Since everything is mixed together all at once, it literally took me less than ten minutes to mix them and get them in the oven. Score!
Ingredients
2 ripe bananas
1 cup greek yogurt (I used vanilla)
2 cups oats
2 eggs
1/4 cup brown sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 cup dark chocolate chips
Directions:
1. Preheat oven to 400 degrees and place muffin liners in pan. Spray with cooking spray, because the absence of oil in these muffins can cause them to stick.
2. Mix everything but the chocolate chips in a food processor.
3. Process on high until oats are blended and batter is smooth and creamy.
4. Stir in chocolate by hand.
5. Fill muffin liners 3/4 full. Sprinkle a few chocolate chips on top.
6. Bake 15-20 minutes or until a toothpick inserted into muffin comes out clean. Allow muffins to cool for at least 10 minutes. Store in an airtight container up to a week.
