Clean Green Bean “Casserole”

I have always loved the traditional Green Bean Casserole at Thanksgiving, but I wanted to make it a little more figure friendly.  So I took the main components: green beans, mushrooms, and fried onions to make my own dish. In truth, it’s not a casserole at all, but it was really good!


Ingredients
2 lbs of fresh or frozen green beans
8 oz. fresh mushrooms
2 cloves garlic
2 tbsp olive oil
handful of fried onions
pinch of salt and pepper


Directions
1. Prepare green beans.  I chose to steam mine, but you could saute them as well.
2. In a frying pan, saute mushtrooms and garlic for 5-6 minutes until mushrooms are tender.
3. Top green beans with mushrooms, salt and pepper. Then sprinkle fried onions on top.


How simple is that?  And it was really fresh and yummy!
