Spicy Cauliflower Bites
My love for spicy food and cauliflower knows no bounds…
So this recipe is right up my ally!
I’m gonna make it for our 4th of July get together this weekend. Fast easy and TONS of flavor!
Ingredients
8 cups cauliflower florets (roughly 2 heads of cauliflower)
2 Tbsp extra virgin olive oil
1/4 tsp salt
2 tablespoons hot sauce (I use Frank’s)
1-2 tablespoons Sriracha hot sauce
1 tablespoons butter, melted (Use ghee for Gut friendly recipe)
1 tablespoon lemon juice
Preparation
- Preheat oven to 450°F. Coat a large rimmed baking sheet with cooking spray.
- Toss cauliflower, oil and salt in a large bowl. Spread on the prepared baking sheet; reserve the bowl. Roast the cauliflower until it’s starting to soften and brown on the bottom, about 15 minutes.
- Meanwhile, combine hot sauce, Sriracha to taste, butter and lemon juice in the large bowl. Add the roasted cauliflower and toss to coat. Return the cauliflower to the baking sheet and continue roasting until hot, about 5 minutes more.
I will serve mine with celery and carrots as well as Greek Yogurt Blue Cheese Dressing:
- ½ c plain Green Yogurt (I used Chobani, 0% fat)
- 1-2 T apple cider vinegar
- 1 T olive oil
- ¼ t salt
- ¼ t dry mustard
- pinch of cayenne pepper
- ½ c crumbled blue cheese
